Ham with Pineapple

INGREDIENTS:

  • 1 x Whole Unsmoked Gammon on the Bone
  • 1/2 cup of Whole Cloves
  • 1 (20 oz) can of Pineapple rings in syrup
  • 1/2 cup Brown Sugar
  • 1 (12 fluid oz) can or bottle lemon & lime flavour carbonated drink
  • 1 (4oz) jar chopped maraschino cherries

METHOD:

  1. Preheat the oven to 160C

  2. Place Gammon in a roasting pan.  Score the rind of the gammon with a diamond pattern.  Press a clove into the centre of each diamond.  Drain the juice from the pineapple rings into a medium bowl, and stir in the brown sugar and lemon & lime soda.  Coat the ham with this mixture.  Arrange the pineapple rings over the outside of the gammon.  Place a maraschino cherry in the centre of each pineapple ring, and secure with th cocktail stick.

  3. Bake uncovered for 4 to 5 hours, basting frequently with the juices, until the internal temperature of the ham is 72c.  Be sure the meat thermometer is not touching the bone.  Remove cocktail sticks before serving
